Another day, another pumpkin treat! After coming upon a recipe yesterday for pumpkin spice lattes and daydreaming about an afternoon trip to Starbucks, the seed was planted that the iconic fall beverage would need to be celebrated in the form of a cupcake (see the summer time Starbucks-inspired cupcake). I found a recipe that I revised for the cake portion (I wanted it to be healthier, so I used egg whites, applesauce for oil, etc), and then decided that the whipped cream topping was not going to be suitable and an espresso cinnamon buttercream was freestyled. Super tasty! Laura’s coworkers and mine will be enjoying these little mini treats today! Happy Fall!
