Carrot Cauliflower Parsnip Mash

So I have a new awesome and healthy side dish! Carrot Cauliflower Parsnip Mash. Super easy, full of tons of vitamins, and a great accompaniment to some grilled meat, or a future topping for a healthy sheperd’s pie…so many possibilities!

1 pound carrots
1 head of cauliflower
4 medium parsnips
1 medium onion
2 cups water
1 tbsp butter (I used Smart Balance Light)
Salt, pepper, garlic salt to taste

Chop the veggies and dump them all in a sauce pot with the 2 cups of water. Cover and cook on medium for 20-25 minutes or until soft. Drain and return to pot. Add butter and seasonings and use an immersion blender to purée. Makes 4 servings.
