Baked Blueberry Oatmeal

If you are looking for a healthy way to jumpstart your day this is the recipe for you! The recipe makes a 9×13 pan and I divided it into 8 servings so that it would last 2 people about a week of workdays as an easy-to-reheat breakfast!

In addition to oats, the ingredient list also includes quinoa flakes, barley, and flaxseed meal. They all blend together and taste like regular oatmeal but adds so much more bang for the buck.

Blueberry Baked Oatmeal

Ingredients
2 cups old fashioned oats
1 cup quinoa flakes
1/4 cup flaxseed meal
3/4 cup quick barley
4 cups water
1/2 cup yogurt, plain
1/4 cup maple syrup
1/2 cup egg whites
1 tbsp applesauce
2 tbsp butter, melted
3 tsp cinnamon
1 tsp salt
2 tsp baking powder
3 tsp vanilla extract
3 cups blueberries

Directions
1. Combine oats, quinoa, flaxseed and barley in a large bowl with the water and yogurt. Allow to sit for an hour.
2. Combine remaining ingredients in a separate bowl, except the blueberries.
3. Spray a 9×13 pan and add half of the blueberries, spread evenly around the pan.
4. Combine egg mixture with oat mixture and pour into prepared pan. Sprinkle with remaining berries and bake at 350 degrees for 30-40 minutes or until set and browned on top.
