Wow, into week 2! Yay!! Today was a good day. I managed my 4:30 wake up, my morning run, and was still to the office around 6:40. Perfect!
It was also nice to be so prepared today with snacks and meals that I was ready to enjoy. Last week I don’t think I knew how it’d go and what I’d feel like eating at different times of the day. But I planned well and bring able to have fruit (1 serving per day for this week) also made life seem better.
Here’s what I ate:
-acorn squash with almond butter, flaxseed meal, cinnamon, and a little maple syrup (I know it sounds weird but it was very yummy)
-2 mini turkey sausages
-a little coffee with almond milk
-mixed greens with grilled chicken, 1-1/2 hardboiled eggs, 1/2 an avocado, some bacon pieces, carrot shreds, and a little vinaigrette dressing. Super yummy.
-coconut Lara Bar — this was my fruit for the day. Not a full serving but I figure that’s alright
-a handful of pepitas
-same as last night — maple mustard chicken and butternut squash with green beans
