Here is my recipe for the paleo energy balls!
1 cup coconut flour (add more if balls need a little more to hold shape)
1 cup sunflower seeds (mine were salted so I didn’t add any additional salt, but add 1/2 tsp sea salt if you have unsalted seeds)
1/2 cup flaxseed meal
1/2 cup cocoa powder
1 cup almond butter
2 tsp vanilla
1/3 cup honey
Blend the dates in a food processor with a little water if needed to soften. Add in the sunflower seeds and continue to blend until combined. Add the remaining ingredients to the date and seed mixture and blend until the mixture forms a large ball and/or is sticky and holds shape. Roll into balls and refrigerate until ready to eat.
Makes about 40 balls
These can easily be put in the freezer. And the recipe can also be halved if you don’t need so many!
