I love love love this recipe! We have had it about 5 times in 2 weeks and it will definitely be a recipe that I’ll use well after the paleo challenge is over.
Maple Mustard Chicken
⅓ cup ground mustard (no sugar added)
3 tablespoons maple syrup
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar
½ teaspoon black pepper
1 garlic clove, minced
6-8 chicken breasts (thighs work too)
¼ teaspoon sea salt
1 tablespoon fat (olive oil, coconut oil, lard, etc.–or use leftover bacon grease!)
1. Combine first 6 ingredients. Place half of the mixture in a zip-top plastic bag; reserve remaining mixture. Add chicken to bag and let chill for 1-2 hours.
2. Preheat skillet to medium-high heat and add your chosen fat!
3. Remove chicken from bag. Sprinkle chicken with salt. Place chicken on grill pan or skillet and cook for about 8 minutes on each side or until done. Serve with reserved mustard mixture.
