We had a mini Bachelorette finale viewing party last night. It was definitely more enjoyable to watch than last week’s mega-dramatic episode. Either way, watching it with friends and wine makes it fun!
I was looking for a dinner idea that I could toss together quick when I got in from my tabata workout on the rooftop of my gym’s parking garage (it was the most perfect fake-fall-feeling summer night!). So the peach prosciutto grilled cheese was born!
After a quick stop by the grocery store for fruit, meat, and bread, then my fave local cheese shop to get a good cheese pairing recommendation, I headed home to get ready for my workout and walk over to the gym.

A little humor on my walk and in the cheese shop
Peach and Prosciutto Grilled Cheese
-8 slices of sourdough
-2 white peaches, sliced
-1/4 lb gruyere (about 1-1/2 fingers of a block)
-4 slices prosciutto (or more, if it tickles your fancy)
1. Heat a grill pan to med-high
2. Butter one side of bread slices, and place 4 pieces, butter side down, onto grill pan surface.
3. Layer cheese, then peach slices, prosciutto, additional cheese, and another bread slice on each.
4. When cheese starts to melt and bread starts to brown, flip and cook on the other side until all cheese is melted.
Makes 4 sandwiches
