Butterfinger Cupcakes


I had the special honor of being asked to make cupcakes for a friend who needed to take cupcakes to her boss’ retirement party. So thus I present to you Butterfinger Cupcakes!

-10 fun size Butterfingers, unwrapped and crushed
-1 box butter recipe cake mix
-1/2 cup creamy peanut butter
-1 cup water
-1/4 cup unsalted butter, softened
-3 eggs

-6 tbsp unsalted butter, softened
-4 oz cream cheese, softened
-1/2 cup creamy peanut butter
-4 cups powdered sugar
-1/3 cup cocoa powder
-2 tbsp milk
*additional Butterfingers for garnish (I used a 1/2 of a fun size for each)

Makes 24 cupcakes


1. Heat oven to 350 degrees. Line cupcake pan with liners.
2. In bowl, mix all cake ingredients (except the candy pieces) on low for a minute, then on medium for 2 minutes. Stir in candy pieces.
3. Using a 1/4 cup measurer, fill cupcake liners with 1/4 cup of batter. Bake 15-17 minutes or until toothpick inserted comes out clean.
4. Allow cupcakes to cool. For frosting, beat butter, cream cheese, and peanut butter until smooth. Alternate powdered sugar, cocoa, and milk, beating until all is incorporated and smooth. Add additional milk as desired to reach desired consistency. Spread or pipe onto cupcakes and garnish with candy piece!
